Can you resist a tempting, juicy double decker burger? Well I can’t, for sure. May it be chicken or beef, bring it on baby. So here’s my favorite double decker chicken burger recipe from scratch
Why this Recipe?
I have given alot of burger recipes a try but this double decker chicken burgers recipe seemed to click. Because, it was quick, easy and oh-so perfect! Enough said, let’s make some burgers. Btw about the chicken patties that go in this baby, I have also tried their less-spicier form (added only salt and a pinch or two of black pepper) and they were simply loved by little kids and toddlers. So these burger patties can be a good addition to your healthy-lunch-box-items or party food, as the need may be. Anyways, let’s start making some double-deckers.
Double the Chicken – double the Fun!
But before you rush into grilling burger buns on the stove or on an actual grill, there are a couple of points that either make or break your burgers, so listen close. If you want to make excellent home made burgers like restaurant style then there are a couple of things you need to make sure.
How to Make a Perfect Burger
Things that make a great burger:
- Buy the best brand of burger buns you can afford, if you don’t make burger buns at home. Dawn burger buns are way too crumbly, however .
- Always lightly toast your buns, inside only after applying a teaspoon of mayonnaise on each.
- When lightly toasting burger buns, don’t press them too hard. You’ll have a de-shape instead of a beautiful round one.
- When adding mayonnaise and sauces to your burgers, don’t over do it please. No body enjoys sauce dripping all over.
- Make your burger patty at home.
- When cooking chicken patty, always cook it on a medium low flame to ensure it’s well cooked from inside but not over cooked. If you over cook your chicken patty, it will be hard and dry, not juicy and tender, so may close attention to that.
- Wrap your final burgers in wax paper or butter pan and pop them into the microwave for 1-2 minutes.
And if you are a coating chicken patty pan, try these crunchy burgers instead, Hot and Spicy burgers. They taste like KFC, ssshhh! Yes they do, whispers*
A thing of beauty, joy forever! This is pure joy, alhumdolillah!
The burger patties recipe that I have used in my burgers has been taken from Chef Rahat. Chef Rahat renowned for her culinary as well as talking skills hehehehe (No hard feelings please, just burgers)
- For the burger buns
- Burger buns--------------------- 5
- Mayonnaise---------------------- 10 tsps, two tsp each
- For the chicken patties
- Chicken boneless---------------- ½ kg
- Salt------------------------------ 1 tsp
- Black pepper--------------------- ½ tsp
- Mustard paste------------------- 2 tbsp
- Soya sauce---------------------- 1 tbsp
- Ketchup------------------------- 1 tbsp
- Water--------------------------- 2 tsps, if needed
- Breadcrumbs-------------------- for coating
- Flour----------------------------- 1 cup for coating (maida)
- Corn flour----------------------- scant less than ½ cup
- For the burger Sauce
- Mayonnaise----------------------- 1 cup
- Ketchup-------------------------- 1½ tbsp
- Mustard paste-------------------- 2 tsps
- Salt------------------------------- according to your taste
- For Final Assembly
- Iceberg lettuce shredded
- Tomato slices
- Cucumber slices
- Cheddar cheese slices (I used Happy Cow's burger slices)
- Jalapeno slices (comes in a glass bottle)
- Wax paper or butter paper
- For the burger buns
- First of all cut the burger buns into two equal parts to make a double decker.
- Apply mayonnaise on top of each cut section of the burgers. (First apply mayonnaise on the bottom bun, then the cut up middle on and lastly inside part of the top bun, get it?)
- Now lightly toast the parts on which mayonnaise has been applied, all three of them. Don't press too hard, just handle them with a light hand. You can lightly toast them on a grilling pan also but I used a regular "Tawa".
- Lightly toast and set aside.
- For the chicken patties
- Take the boneless chicken pieces into a clean and dry bowl and add all the sauces and the seasonings. Marinate for 20 minutes and then grind the boneless chicken to a paste.
- Now make 10 balls out of it and with the help of a fork, coat each ball into the flour and corn flour paste ( instructions for the paste are given below).
- Take it out the paste and then coat it into breadcrumbs, gently pressing with your fingers to make a round, flat patty. Make it thin, but not too thin to carry.
- Now deep fry till golden brown and set aside.
- For the Paste
- Take flour (maida) in a bowl, add corn flour and mix with a wire whisk or fork.
- Now incorporate as much water to make a medium consistency paste. It shouldn't be too thick or too watery.
- So, add water only 2 tablespoons at a time, don't rush, please.
- For the burger Sauce
- Take mayonnaise in a bowl and add ketchup and mustard paste to it. Add salt if you like.
- For Final Assembly
- Place the bottom burger bun on the plate first (lightly toasted earlier, remember?)
- Then apply the sauce over it (approx. one tsp).
- Now place shredded iceberg lettuce over it.
- Now the cheese slice.
- Followed by the chicken burger patty (you just made :P)
- Then the second layer of burger bun.
- Apply sauce over it.
- Now the chicken patty.
- Cucumbers, tomatoes, jalapeno, gherkins, anything you like.
- Apply sauce inside the top bun as well, and place it over the rest of the assembled burger. Press gently! I said, gently!
- Now wrap it in a wax or butter paper and microwave 30 seconds before serving.
