Don’t you just love tomatoes, I know I do. Not more than the smell of freshly crushed, sauteeing garlic or red onions but still it has its place in my heart, awlays! Enough with my love affairs with food, let’s get to business.

Currently I’m on the cabbage soup diet, you must have heard about it, anyways. So, the 5th day of this diet plan called for chicken and tomatoes only. For someone who loves to explore new flavors and spices, this was a perfect oppertunity. I was allowed to eat a little more than half-a-kg, so insted of going for the ame old chicken curry, I thought maybe something a little different would be nice. I tried out chicken stew with tomatoes and it turned out beautifully delicious.

Me and my husband loved it.I made his one with sausages and mine with chicken boneless. I made a few alternations which will give the chicken a kick of flavors according to our taste. Since, you know that canned tomatoes are not that budget frendly these days so, i took the liberty of using fresh tomatoes, gave them a decent slit on the surface, placed them in boiling hot water for 3 – 4 minutes and then quickly rinsed them with cold water to peel off their skin easily. Once the skin was off, chopped them finelly, put them in a saucepan and cooked till most of the water evaporated and the sauce dried, viola! The rest of the recipe is the same.

What you need>>>
Chicken—————— 1/2 kg
Tomatoes————— 6
Butter——————– 1 tbsp
Oil———————— 1 tbsp
Mustard paste———- 1 tsp
Oregano—————– 1 tsp
Onion——————– 2 medium, thinly sliced
Garlic——————– 5 finely chopped
Salt———————– to taste
Black pepper———— 1 tsp
Red chilli powder——- 2 tsp
Ketchup—————— 2 tbsp heaped
Lemon juice————– 1 tbsp
Water——————– 1/2 cup
How it’s made>>>
First we need to make the paste>>>
Take 6 tomatoes and give each a cut, it shouldn’t be too deep.
Now add them to the boiling water for 5 – 8 minutes.
Once done, drain and run through cold water to peel off their skin easily.
Skin is off now, chop them nicely, catch any drop of juice as you chop them.
Put them in a saucepan, and try to dehydrate them as much as you can i-e to evaporate water from them so they form tomato paste. Occasionally stir to avoid burning them once and for all.
Once it’s done, set aside.
Now for the chicken bit.
  1. Take oil and butter in a frying pan.
  2. Add onions, just let them cook for a tad while, till they turn light pink.
  3. Add chicken in Julian. Stir, stir, stir.
  4. When chicken turns white, add the tomato paste.
  5. Add salt, pepper, lemon juice, red Chilli powder, origano, rosemary and ketchup and stir it well baby.
  6. Add a little water to cook the chicken.
  7. Cover for 5 minutes till chicken is done and sauce has its perfect consistency.
  8. Lastly add mustard paste and hide somewhere so, you don’t have to share it with anyone, I do 🙂
Serve it with plain rice, or eat it as it is,
trust me, it’s good to go anyhow.
