God when i first saw them, a couple of months back, i wondered when i earth would i get my chance to bake these little beauties. Love at first sight, you can say.

And finally today, i got the chance to make some of these rainbow cupcakes myself. They still need an icing, but they just looked so cute without it. Guess i won’t add an icing to this batch. The second one will have icing on them, God be willing.Β  πŸ™‚

All you need>>>

All-purpose flour———- 1 cup
Baking powder————- 1 1/2 tsp
Buttermilk—————— 1/2 cup
Salt————————— 1/4 tsp
Oil—————————Β Β  1/2 cup
Eggs————————— 2 Large
Castor sugar—————- 1/2 cup
Vanilla Essence————- 1 tsp

How it’s made>>>

  1. Preheat the oven at 180 C.
  2. Sift flour, baking powder and salt together.
  3. Whisk together oil, buttermilk, vanilla essence, sugar and eggs. Don’t over beat.
  4. Pour the wet ingredients into the dry one’s and fold.
  5. Divide the batter into 3.
  6. Add the desired color and mix lightly.
  7. Pour 2 tsps of each color into the cupcake cases, exactly in the center of the previous color and bake for 10-15 minutes or until a skewer comes out clean.

Buttermilk>>>

If you don’t have buttermilk, you can make a substitute at home easily. For 1/2 cup buttermilk, Get 1/2 cup milk and put 1/2 tbsp of vinegar or Lemon juice into it and let it rest for 10 minutes before using.

Cupcakes Icing:

I gotta admit they were too cute fro icing. But next time when I’m gonna make them, I’ll put some icing onto it as well.

All you need>>>

Butter————— 1/2 cup or 225 g
Milk—————– 3 tbsp
Vanilla Essence— 1 tsp
Icing sugar——— 3 cups

How it’s made>>>

  1. Beat butter, milk and V.E together till fluffy.
  2. Beat in the icing sugar to get the desired spreadable consistency.
  3. Pipe onto the cup cakes.
