I always wanted to bake these lovely chocolate volcanoes. I even gave them a try but maybe the oven was too hot or maybe i let them set in the oven for too long or God knows what. But they weren’t runny from inside, as they are supposed to be. The lava cake missed it’s lava hehehehehe
So when i saw this recipe with it’s how-to-make help images, i just couldn’t resist, that was it! I had to bake ’em again, i just had to 🙂 And there i was, all never and excited at the same time, as they were finally baking in the oven half an hour later. And to my surprise, they came out just perfect! Firm from the outside and runny from the center inside, 😀 yay! See for yourself!
Amendments I’ve made in here.
- I used coffee powder instead of instant coffee.
- Used half a teaspoon of vanilla essence.
- I used extra dark chocolate instead of bitter-sweet chocolate.
Now I’m giving you the original recipe here.
All you need>>>
Dark chocolate or cooking chocolate———– 8 oz
Unsalted butter——————————- 225g
Coffee powder——————————— 1/2 tsp
Eggs——————————————-4
Egg yolks————————————– 4
Castor sugar———————————– 3/4 cup
Vanilla essence——————————— 1 tsp
All-purpose flour—————————– 1/4 cup
How it’s made>>>
- Preheat the oven to 200 C.
- In a heat proof bowl combine butter, chocolate and coffee. Place it over a pan of boiling water and let it all melt together nicely. When melted keep aside.
- In another bowl combine eggs, egg yolks, sugar and Vanilla essence, beat it till fluffy and pale.
- Once the chocolate mixture has cooled completely, add it to the egg mixture in a thin stream and continue beating till all used up.
- Sift flour on top and gently fold it into the batter, don’t over mix it.
- When done pour into your ramekins, place them on a baking tray and bake for 13-15 min or until they are raised a bit and a bit harder on top.
- Let it rest for 10 sec. then run a sharp knife around the edges very careful and lift the ramekin, the cake will softly slide off.
Garnish with Whipped cream and enjoy! 😀

I thought they baked these lava cakes in water trays! :S And this doesn’t have baking powder which means the mixture can be prepared before-hand, can we do that? I’ll definitely try these ones 🙂

OK, so the thing is I have a gas oven. And whenever I’ve made cakes,
they’ve come out good enough but not what I was hoping for…
can my baking pan be the culprit here? Because, frankly, it’s an excuse of a
pan… could you kindly tell me which pan to get and from where? Like, complete
with the size and all?
Also, I’m pretty sure, but still I’m double-checking. For baking, which flame do we have to light in the oven… the top one or the bottom one?
And is it the same for pizza and lasagna?

About pans: Ummm if you live in Lahore, try Al-fatah, Main Market and even HyperStar has got some good pans. Mostly 8″ or 20 cm pans are used in cake making, because it is perfect for 6-7 members family. Non-stick pans are the best as they don’t require any oiling or applying butter-paper and all. But they are quite expensive so start off with regular pans, grease them properly and et perfect cake every time.
If the pan is not half full, the cake will taste great but will not rise that much. Always half full or max. 3/4 fill up your pan. Any less than this amount will yield shorter height cake which is not that presentable 🙂
I use electric oven so don’t have much info about gas ovens, sssoowweee will try to get a link and post it for you though.

I tried looking in Hyperstar but all they had were microwave oven so yeah

Noor I wanna buy a “gas oven” because electric oven is not at all cost efficient and secondly electricity supply can go away any time WAPDA feels like it, so if you’re baking a cake and light goes out, your cake’s goooooooone, happened to me TWICE.

Ramekins are small, oven proof bowls that you can easily get from Main Market, God willing! They are approximately for 1 cup liquid. Ideal for single servings and get around 6, because these cakes are baked individually.
May I ask exactly which shop and where in Main Market?

Nope, didn’t get their names but here are the directions (trust me my navigation skills are very close to ZERO so good luck) goto main-market round about, keep going round till you cross two lanes after jalal sons. These shops are right at the end of that dahi bhallay wali shops, andthere’s a bank in this lane as well. Also these shops are adjacent to Arif Paint shopsand bata so you can’tmiss them.

you donot turn till the dahi bhallay wali side lane on the main round about comes, the shops are right next to bata and arif paints. besides you may even get them from jalalsons, there’s no harm in asking, ya know.

Can you tell me which brand cake batter beater and oven do you use? I have been trying to find a table top gas oven, size of a microwave for baking purposes but don’t know how the baking results in them.
