I’ve been trying to make those soft, light not too hassle chocolate muffins but, one way or the other just couldn’t get my hands on the perfect recipe to suit my standards hehe 🙂 no seriously! Because they are quick, easy and hassle free and what you get is soft and fluffy, deep and light 18 muffins. Not too sweet, just sweet enough to satisfy your sweet tooth.

A friend of mine gave me this recipe. This is Nigella’s recipe actually and boy it works wonders. I baked these yesterday and not even one complained. My husband, my mother-in-law, my sister-in-law etc etc everybody loved them. And ask for myself, well to be honest if they weren’t good enough, i wouldn’t have posted ’em here 🙂

What you need>>>

Flour———————  250 g
Baking powder———- 2 tsp
Baking soda————– 1/2 tsp
Castor sugar————– 175 g
Oil————————– 90 ml
Cocoa powder———— 2 tbsp
Chocolate chips———- 150 g
Egg————————– 1
Milk————————- 1 cup
Vanilla essence———– 1 tsp

How it’s made>>>

  1. Preheat the oven at 200 C.
  2. Stir all the dry ingredients together with the chocolate chips and set aside.
  3. Lightly whisk the wet ingredients together.
  4. Pour the wet ingredients into the dry ingredients and fold gently.
  5. Pour into your muffins paper cases and bake for 20 minutes.

Perfect for tea parties, snacks or just for the heck of it 🙂
I made them yesterday, guess I’ll bake them again, God be willing this week also 😀
